Try this mouthwatering recipe by Executive Chef Ben Day using Aravina Cucina Tomato and Chilli Jam
STIR FRIED EXMOUTH KING PRAWNS WITH TOMATO AND CHILLI JAM AND KAI LAN
20 peeled and cleaned Exmouth King Prawns
50 ml vegetable oil
2 shallots, peeled and sliced
20g of ginger, grated on a micro plane
4 garlic cloves, peeled and sliced
1 Bunch of Kai Lan (Chinese Broccoli), washed and roughly cut
2-4 tbls of Aravina Cucina Tomato and Chilli Jam
2 tblsp light soy sauce
10 fresh basil leaves
Using a hot wok, add oil and stir fry prawns for 30 seconds. Add shallots, ginger and garlic. Once they have coloured add the washed Kai Lan, allow a touch of water from the vegetables to go into the wok. When the prawns look cooked add chilli and tomato jam and soy sauce then remove from the heat, stir through basil and wilt.
Serve on steamed rice or noodles.
